  • Step 1

Cut the puff pastry into 8 squares, each side measuring about 6 cm. Place them on a baking tray lined with parchment paper.

  • Step 2

Cut about 2 cm from each corner towards the center of the pastry square. Spread green pesto on half of the pastry squares and sun-dried tomato paste on the other half.

  • Step 3

Cut thin slices of mini goat cheese log, about 5 mm thick. Place two slices in the center of each square. Fold the corners of the pastry over to the center to form a windmill shape.

  • Step 4

Push a skewer into the center of the cheese. Add a little water to the egg yolk and brush this egg wash over the windmills.

  • Step 5

Preheat your oven to 180°C and bake for 15 minutes. Serve at room temperature.

How to Use Goat Cheese in Classic Italian Dishes

Italian cooking is full of familiar flavours that pair naturally with goat cheese: ripe tomatoes, fragrant basil, roasted vegetables, mushrooms, olives, herbs and pesto, to name just a few. Exploring goat cheese in Italian cuisine does not mean replacing the cheeses traditionally associated with these dishes. Instead, it offers another way to interpret familiar favourites — bringing creaminess, a distinctive flavour or a different texture while preserving the character of the original dish.

From pizza and pasta to risotto and bruschetta, the key is choosing the right type of goat cheese for the role you want it to play.
