Lemon granola tart with fresh goat cheese

  • 1 Lemon
  • 1 Soignon Spreadable goat cheese Pyramid Plain, 140g
  • 1 container of goat or cow’s milk fromage blanc
  • A few mint leaves

  • 100 g oatmeal (or unsweetened granola mix)
  • 30 g butter
  • 20 g honey

  • Step 1

    In a large bowl, mix 300 g of goat or cow’s milk fromage blanc with a Soignon Spreadable goat cheese Pyramid Plain, 140g. Add the juice of one lemon.

  • Step 2

    This should give you a thick lemon cream to cover the tarts with.

  • Step 3

    Melt the butter over low heat with the honey.

  • Step 4

    Mix with oatmeal. Line a pie tin with parchment paper. Place the mixture on top and spread out evenly with the back of a spoon.

  • Step 5

    Preheat your oven to 180°C and bake for 10 minutes. The oats must be browned. Let cool completely.

  • Step 6

    Just before serving, remove the crust from the tin and top with the lemon and goat cheese cream. Decorate the tart with a few slices of lemon, zest and a few mint leaves.
