Buckwheat crepes with apple and goat cheese

  1. Peel and slice the onions. Heat some fat in a skillet on low heat and brown the onions. After 10 minutes add the honey with a dash of water. Stir and season with salt. Reduce and caramelize.

  2. Core the apples and cut them into quarters. Heat some fat in a skillet on low heat and brown the apple quarters for about 15 minutes. Leave to cook on medium heat.

  3. Reheat the buckwheat crepes in a skillet. Divide the onions and apple slices between the crepes and top each one with 3 slices of RIpened Goat cheese log

  4. Put in the oven for 5 minutes at 200°C. Serve with a green salad.
