Goat cheese and spinach feuilletés

Stuffed eggplants with goat cheese, caramelized onions, honey, tomatoes and thyme
Serves 4 servings

  1. Chop the spinach. Add the cream. Season with salt and pepper to taste.

  2. Preheat the oven to 180°C

  3. Roll out the puff pastry and cut it into 4 squares, each measuring about 4 inches x 4 inches.

  4. Spoon some spinach into the center of each square (approximately 2 generous spoonfuls per square).

  5. Add a Soignon Medallion and fold the 4 corners of the pastry into the center to make a smaller square. Repeat the previous step for the other 3 squares.

  6. Put the pastry squares on a baking tray and brush with egg or milk.

  7. Bake in the oven for 20 minutes.

  8. Serve hot with a side salad.
