Roasted apples with goat cheese and smoked bacon

  1. Preheat the oven to 210°C. Wash the apples, cut off the tops and carefully hollow them out.

  2. Put the apple shells on a baking tray. Mix the honey, pine nuts, thyme, red currant, and hot paprika and fill the apples with this mixture. Bake in the oven for about 10 minutes.

  3. After 10 minutes, remove from the oven and place a Soignon Goat cheese with bacon wrapped on top of each apple. Bake for a further 5 minutes. Meanwhile, toast the slices of gingerbread.

  4. Remove the baked apples from the oven and serve hot, with a mesclun salad and balsamic vinaigrette.
