  1. Wash the cucumber and halve it lengthwise.

  2. Deseed it with a small spoon.

  3. Chop the mint, tomatoes, and olives and mix together with the pine nuts.

  4. Fill the cucumber boats with the Soignon Whipped goat cheese and top with the olive mixture.
