Tagliatelle with goat cheese and honey sauce

  1. Peel the beet and sweet potato and cut them into sticks.

  2. Place them on a baking tray lined with parchment paper.

  3. Drizzle with oil and season to taste.

  4. Preheat your oven to 190°C and roast them for 20 minutes.

  5. While they are in the oven, cook the quinoa according to the instructions on the packet.

  6. Heat the falafel.

  7. Chop or tear the lettuce.

  8. Mix together the cashew paste, lemon juice, and warm water.

  9. Cook the Breaded cheeses according to the instructions on the packet until they are golden.

  10. Dish the quinoa into the center of the serving bowls.

  11. Add the falafel, vegetables, lettuce, and breaded goat cheese around the quinoa.

  12. Drizzle with vinaigrette and serve.
