Method
Dice the cherry tomatoes.
Chop the onion and mix with the tomatoes.
Season with salt, pepper, chopped chives and a dash of lime juice.
Dice the avocado.
Brown the breaded goat cheese according to the packet instructions.
In a salad bowl, season the mesclun salad with salt, pepper and a drizzle of olive oil and lime juice.
Plate it.
Add the diced avocado, red cabbage and serve with the tomato salsa and warm breaded goat cheese.
