Warm goat cheese and tomato salsa salad

  1. Dice the cherry tomatoes.

  2. Chop the onion and mix with the tomatoes.

  3. Season with salt, pepper, chopped chives and a dash of lime juice.

  4. Dice the avocado.

  5. Brown the breaded goat cheese according to the packet instructions.

  6. In a salad bowl, season the mesclun salad with salt, pepper and a drizzle of olive oil and lime juice.

  7. Plate it.

  8. Add the diced avocado, red cabbage and serve with the tomato salsa and warm breaded goat cheese.
