  1. Soak the gelatin in a bowl of cold water.

  2. Heat the cream in a saucepan. Then, add the gelatin to it.

  3. Add the goat cheese and mix together well.

  4. Then, add the cooked fennel, cut into strips, and the dill, shallots and lemon juice.

  5. Season with salt and the five peppercorn mix.

  6. Pour it all into a terrine mold, alternating layers of the smoked salmon and goat cheese.
