  1. Using a peeler, cut in the zucchini as many strips as there are mini goat cheese logs. Chop the chives.

  2. Place a mini log with speck on the edge of a slice and roll it up. Hold with a pick.

  3. Sprinkle with chives, Espelette pepper (or pepper) and drizzle with olive oil.
