Mousse with Goat Cheese, banana and a salted caramel sauce

  1. Prepare the goat cheese mousse. Beat the goat cheese together with the sugar.

  2. Whisk the egg whites into stiff peaks and gently fold them into the fromage blanc. Refrigerate for at least 1 hour.

  3. Prepare the salted caramel sauce. Heat the light cream. In a saucepan, melt the sugar and leave to cook until it is the colour of caramel. Remove from the heat. Then, add the butter and cream and mix well. Set aside.

  4. Make the desserts by alternating layers of salted caramel sauce, slices of banana and fromage blanc mousse. Top with the salted caramel sauce and sprinkle with chopped peanuts.
