Goat cheese on toast with peas and shrimp

  1. Heat a frying pan over low heat with the butter, sugar, and water.

  2. Add the peas, salt, and pepper and reduce until the water evaporates.

  3. Stir in the mint and set aside.

  4. Peel and clean the shrimp.

  5. Mix the Soignon fresh goat cheese with the lemon juice and a drizzle of olive oil. Toast the slices of farmhouse bread, spread a generous layer of the lemon and cheese mix on top.

  6. Arrange the lettuce on each slice of bread, then add the peas and shrimp.

  7. Sprinkle with lemon zest and season with salt and pepper before serving.
