Method
In a large bowl, mix 300 g of goat or cow's milk fromage blanc with a Soignon Spreadable goat cheese Pyramid Plain, 140g. Add the juice of one lemon.
This should give you a thick lemon cream to cover the tarts with.
Melt the butter over low heat with the honey.
Mix with oatmeal. Line a pie tin with parchment paper. Place the mixture on top and spread out evenly with the back of a spoon.
Preheat your oven to 180°C and bake for 10 minutes. The oats must be browned. Let cool completely.
Just before serving, remove the crust from the tin and top with the lemon and goat cheese cream. Decorate the tart with a few slices of lemon, zest and a few mint leaves.
