Method
Bring the water and milk mixture to a boil in a saucepan with the butter and salt.
Remove the saucepan from heat when it begins to simmer.
Add the flour to the saucepan gradually while off the burner. Put it back on the burner and mix with a wooden spoon, until the dough pulls away from the sides.
Remove from heat and add the eggs. Mix until smooth. Add 140g of fresh goat cheese (the whole pyramid) and mix.
Put into molds (this is essential if you want to make "big" gougères; if you want to make small ones you can just place small dough balls on a non-stick baking sheet).
Sprinkle with grated Gruyere cheese and bake for 25 minutes.
