  1. In a large bowl, mix: flour, baking soda/powder, sugar and a pinch of salt.

  2. In another bowl, mix the 2 egg yolks with the milk then pour into the first bowl. Make sure to keep mixing as you do this. You should get a thick pancake batter texture. Let it rest 15 to 30 minutes.

  3. Beat the egg whites to stiff peaks and fold them into the mixture gently (this is the secret behind super fluffy pancakes).

  4. Cook in a small, hot, buttered pan for 1 minute on each side.

  5. The edges should be golden. You'll know it’s time to flip the pancakes when little bubbles form on top!

  6. In a bowl, mix a few spoonfuls of fromage blanc with 2 spoonfuls of Soignon fresh goat cheese and add a few blueberries.
