Stuffed brie with red peppers

  1. Remove the seeds and white membrane from the red pepper.

  2. Chop the flesh into small pieces.

  3. Heat the oil in a frying pan and sauté the pepper. Season with salt and pepper.

  4. Let it cook on medium heat for 30 minutes. Cover with a lid halfway through cooking.

  5. When the pepper is soft, leave it to cool completely.

  6. Cut the pieces of Brie in half, horizontally.

  7. Spread the peppers, pine nuts, and basil leaves evenly over the bottom halves of the Brie.

  8. Top with the remaining halves of the Brie and chill for 1 hour before serving.
